Omelette Recipe: -1/4 cup chickpea flour -1/4 cup water -6 oz firm silken tofu -1 tbsp nutritional yeast -1/2 teaspoon garlic powder -1 teaspoon cornstarch -pinch of salt and pepper -1/3 cup veggies of choice Directions: 1) Blend all ingredients together to make a medium-consistency batter. Allow to sit while you prep your veggies. 2) Sautee veggies until tender. Set aside. 3) Heat a teaspoon of oil in a nonstick skillet over medium heat. Spread batter into pan to 1/4-1/2" thickness. Lower heat, cover and steam. 4) Omelette is ready to flip when the top is mostly matte/dry to the touch. Flip and add vegetables and vegan cheese (optional) to half. Allow to cook for another minute. 5) Slide out onto a plate and fold. If you have Indian black salt, sprinkle a bit on top for extra "eggy" flavor.
